A light refined drink made in the same way the French have made some of their best sparkling wines!!
Method traditionelle is the secondary bottle fermentation that we give our cider; this gives the unique sparkle, mousse and finish. Suitable as an aperitif, compliments light meals. We use only the best of English Apples, and combined with our winemaking skills produce a unique taste.
Polgoon is an old farm on the edge of Penzance (built 1803), so we decided to call it Aval the Cornish word for Apple. We are very proud of its origin. Great at functions, being suitable for toasts, pre dining drinks etc. Best served chilled in a champagne flute.
With the large success that has come with our production of Polgoon Aval, the minds that put the raspberry into our apple juice decided; why not do the same with this adult alternative?
By adding a small amount of rasberry to the aval just prior to its secondary fermentation in the bottle we have been able to produce a completely unique but equally refreshing sparkling cider (with raspberry!).
